Ingredients

  • 1/4 cup loose green jasmine tea
  • 1/2 cup fresh mint leaves plus more whole sprigs for garnish
  • 2 cups simmering water
  • 1/2 cup lemon juice
  • 1/3 cup honey
  • 2 cups cold water

Instructions

  1. Steep loose mint leaves in simmering (not boiling) water for 2 to 3 minutes. It’s advisable not to use boiling water when steeping tea leaves as it may burn the leaves, making your tea bitter.
  2. Once your water is at the right temperature, add 20 grams of Jasmine tea leaves and steep for 2 minutes.
  3. Meanwhile, bring sugar to a boil in a small saucepan and stir until sugar dissolves and takes the form of syrup. Let it cool completely.
  4. As and when the 2 minutes steep is over, strain the tea into large pot. While the tea is still warm, add in honey and stir to dissolve. Let cool.
  5. Stir together tea and sugar syrup (the quantity of the syrup added depends on desired sweetness). Refrigerate it for at least 1 hour so that it cools down completely.
  6. Once the tea is cooled down, squeeze in the juice of 1 ½ lemons. Taste after adding lemon and adjust to your liking.
  7. Pour over ice and enjoy your cool drink. This tea is good to go for 10 days, if refrigerated well.
  8. You can also add some fresh strawberries (or any other summer fruit) into your tea once it’s ready. This can be an addition of a new flavor to your drink. However, the best way to drink your jasmine tea is to drink it plain, without added dairy, milk alternatives or sweeteners. That keeps the calorie count at zero, and also keeps your tea free from any added sugars.
